This style of wine heralds from the southern Rhone valley in France. Theclassic style is fermented dry so it can be consumed on a hot summers day with a refreshing and cleansing palate that compliments food. Australians have turned this style somewhat sweet, however, we have focused our winemaking on the original 'old world¹ style.
 
Interesting fact:
Original claret was a pale ('clairet') wine from Bordeaux that would probably now be described as a rosé.
 
Viticulture and Vinification

· Dry grown and machine harvested at night, approximately one month prior to hand picking the Chardonnay and Pinot Noir for our varietal wines
· The vineyards yield between 1 - 3.5 tonnes/acre
· Pressed, chilled and 'rough' racked to retain some grape solids, the component parts (50% Chardonnay and 50% Pinot Noir) are separately fermented and then blended
· 50% tank and 50% older French oak used
· No malolactic fermentation to retain freshness
· Bottled approximately six months after harvest
